These vegan apple cinnamon muffins came to Fruiton after my nephew asked me to make him something sweet for breakfast with apples and cinnamon. We narrowed it down to pancakes and muffins, and by that I mean he wanted pancakes and I wanted muffins, but after a little bit of persuading, he got the hint and sided with the muffins. Now you may have noticed from the photo, that the apples are only on the top, this was completely unintentional. I realized I hadn’t folded in the apples after I had already filled the tins, so I decided to just put them on top and press them in; this ended up being a happy accident and made for a really striking appearance when they came out of the oven.
What apples work best?
This is up to you! Whatever apple you enjoy most is going to be best. For me, that would usually be between Granny Smith, Gala, and Pink Lady. Whatever apple you choose should be great in these Vegan Apple Cinnamon Muffins!
Could I add the apple-cinnamon mixture to the batter before filling the tins?
Yes just do it right before filling the muffin tins, and just fold it in lightly, not evenly. This will give you nice pockets of apple throughout the muffin.
How long should these last?
On the counter, covered, these should last for about 3-4 days. Baked and frozen, they should be good for about a month.
Why do apples and cinnamon taste so good?
The sweet and tartness from the apples combined with the warmth and spice of cinnamon balence very well, in flavor and aroma.
Are these Vegan Apple Cinnamon Muffins breakfast or dessert?
They’re both! I love these in the morning with a cup of coffee, but they are also great to end the day with, and they pair very well with a scoop of vanilla ice cream.
Vegan Apple and Cinnamon Muffins
Ingredients
- 2 Cups AP Flour
- 2 tsp Baking powder
- ½ tsp salt
- ¾ Cup Sugar
- ½ Cup Neutral oil I use vegetable or avocado oil
- 1 Cup + 2 TBS Oat milk Almond and soy work great as well
- 1 tsp Vanilla paste/extract
- 1-2 Apples I used 2 smaller apples
- 2 tsp Ground Cinnamon
- 2 tsp Sugar
- Extra sugar for topping
Instructions
- Preheat oven to 350F, and place a rack in the middle of the oven.
- Peel, core, and dice the apples into small cubes, about ¼ inch. You should have about 1-1½ cup. Toss in the cinnamon and 2 tsp of sugar. Set aside for later.
- For the dry ingredients, in a medium/large bowl, combine the flour, baking powder, and salt with a whisk.
- For the wet, in a medium bowl, combine the 1 cup of sugar, oil, oat milk, and vanilla paste/extract with a whisk.
- Pour the wet into the dry, and fold with a rubber spatula until smooth, making sure not to over-mix.
- Now line the muffin tins with muffin papers, and fill them up about ¼ inch shy of the top, should be around ¼-⅓ cup of batter per muffin.
- Spoon about 2 tsp – 1 TBS of the apple cinnamon mixture over the top of all the muffins, then press them down with a spoon or the palm of your hand. Sprinkle the tops with sugar.
- Now bake the muffins on the middle rack of the oven for 30-35 minutes. Once done, allow them to cool for no less than 10 minutes before eating.
