This Quick Vegan Lemon Buttercream recipe works well in a pinch and tastes great. It only takes about 5 minutes to whip up, especially if you got your butter to room temp beforehand. this buttercream goes well on cupcakes, cakes, cookies, and pound cake. Beyond that, you don’t need a stand mixer, though if you prefer you may still use one. All that’s needed is a bowl and a whisk.
Quick Lemon Buttercream
Ingredients
- 4 oz Vegan butter Room Temperature
- 2 Cups Powdered sugar
- ½ tsp Vanilla bean paste or extract
- 2 TBS Lemon juice
Instructions
- In a bowl, beat the butter with a mixer or by hand with a whisk until smooth, about 30 seconds.
- Add the powdered sugar, and mix until smooth, about 1 minute.
- Add the vanilla and lemon juice, and mix for about 1-2 minutes until smooth.
